Cinnamon Cake with Brown Butter Frosting

Happy Birthday to the best mom in the entire universe! (Her birthday's on 5th September btw) This wonderful cake for her 45th birthday! I love her very much, missing her that much too. She is such an incredible person. I believe all of us have said that about our own mother. Indeed, they are amazing!


The first time I had ever made her a birthday cake was 3 years ago. I baked a vanilla cake with pink vanilla frosting, pink M&Ms and a chocolate drip. A lot of pink! The pink M&Ms were about to expire so I had to use it. This year I thought why not bake a cake with her favourite flavours. Cinnamon being one of them, which is also a favourite of mine. Paired with, I have to say, one of the best frostings I've made, brown butter frosting. Too bad she's not in NL yet to taste it.



All that matters is that she's in God's hands and in good health. I pray for her everyday, I know she's going through a tough time at work and at home. That's why she needs a vacation from all the stress and just breathe the fresh air of the Netherlands.


Mother, I wish you all the best in life, Jesus is always with you. Don't ever forget that! You are never alone. Even though life put us in a corner, God will make a way when there is none. Surrendering to Him is the key, just as you told me. Jesus loves you so very much and may He bless you in all that you do!

Cinnamon Cake with Brown Butter Frosting

You can use or add other spices too, like ginger and cardamon which works well with cinnamon. It will taste more like a gingerbread cake. To make a 4-tier cake, you can double the recipe. (But still making 2 batches). Take into account if the size of the cake tin is different, because different time of baking may apply too.

Ingredients

Cinnamon Cake

300 g all purpose flour

2 tsp cinnamon

1 tsp baking powder

1.5 tsp baking soda

pinch of salt

100 g butter

100 g granulated sugar

1 egg

1/2 tsp vanilla extract

1/2 tbsp sunflower oil

100 ml buttermilk*

150 ml whole milk

Brown Butter Frosting

100 g unsalted butter

50 g powdered sugar

2.5 ml whole milk/ cream

100 g spiced cookies


Instructions

Cinnamon Cake

1. Preheat the oven to 180 C.

2. Grease a 2 cake tins (D17 cm) and dust the with flour or line them with parchment paper.

3. In a bowl, mix the flour, cinnamon, baking powder, baking soda and salt.

4. In a large bowl, cream the butter and sugar together until light and fluffy. Then add the egg, oil and vanilla extract.

5. Fold in the dry ingredients to the butter sugar mixture. Then add the buttermilk and whole milk. Mix well until combined.

6. Half the batter and pour into the prepared cake tins.

7. Bake for 30 minutes or until a skewer comes out clean.

8. Let it cool and chill in the fridge to firm up.

Brown Butter Frosting

1. Make the brown butter: place the butter in a saucepan over medium heat. Let it melt and foam until it becomes brown (but not burnt) and nutty. Let it cool down and solidify but is still spreadable.

2, In a bowl, place the brown butter and whisk until light.

3. Add in the sugar and whisk through, Then add the milk. The frosting should change to a lighter colour and fluffier texture.

4. Spread the frosting evenly on one of the chilled cake and scatter some crumbled spiced cookies on top. Place the another cake on above of it and repeat to all cakes.

5. Add more crumbled spiced cookies to finish it off.

6. Let it sit in the fridge until it is solid and firm enough to be cut with a hot and sharp knife.


*If you don't have buttermilk, then mix 100 ml of whole milk with 1 tsp white vinegar/ lemon juice and let it sit for 10 minutes before using it.
